RECIPE: ARIABATA SAUCE
1 large can of San Marzano tomatoes, in chunks
3 cloves garlic, finely minced
2 Tsp onion flakes
1 medium-small onion, finely chopped
1 Tsp red pepper flakes
1/2 red pepper, grated
2 Tbsp Heinz Chili sauce
2 Tsp salt
2 splashes of white or red wine
1 Tsp sugar
3 small, sweet, very flavourful tomatoes, finely chopped
Saute onion, onion flakes, red pepper flakes on medium heat for 5 minutes, using high quality olive oil.
Add garlic and cook for another 1 minute.
Add tomato, chilli sauce, 1 splash wine, sugar, grated red pepper, and salt (adjust to taste, maybe 1/2–1 tsp at a time), and simmer on low heat for 1–2 hours. Add the second splash of wine half way through simmer.
Serve with linguine tossed in olive oil, add fresh parmesan as topping with freshly ground black pepper.
