BEEF & VEGETABLE:

1 lb Beef, thinly sliced

1/4 cup Sodium Bicarbonate

1/3 cup Corn Starch

1/4 Red Pepper, or several small hot red peppers

SAUCE:

1/3 cup Rice Wine Vinegar

1/3 cup Brown Sugar

1 tbsp Soy Sauce

1 large Orange Zest and juiced

2 tbsp frozen Orange Juice Concentrate

1 thumb sized knob Ginger, grated

2 cloves Garlic, grated

1 tsp Salt

Combine all ingredients of the sauce and simmer for 10–15 minutes.

Coat beef in Sodium Bicarbonate, and leave for 1 hour. After 1 hour, rinse the beef under cold water until completely free of Sodium Bicarbonate. Rinse many times!

Pat dry the beef with paper towel. Sprinkle with salt. Coat with Corn Starch.

Fry the beef in oil, in batches, until golden, medium high heat.

Heat medium frying pan with 1 tbsp oil, and add the Red Pepper. Fry for a minute or two, then add the fried beef and sauce. Flip the beef frequently and add extra water if needed to allow for easy coating.

Serve when all pieces glazed.
