RECIPE: PATATAS BRAVAS
PATATAS BRAVAS
SAUCE INGREDIENTS
3 tbsp olive oil
1 small onion, very finely sliced
2 garlic cloves, finely chopped
227g canned whole tomatoes (San Marzano), finely chopped
1 tbsp tomato paste
2 tsp sweet paprika
3/4 tsp chilli powder
1 pinch red chilli flakes (hot)
3/4 tsp sugar
1/2 tsp salt
1 tbsp butter
1/2 cup chicken stock
1 splash white wine
POTATO & Garnish
500–2000g potatoes, peeled and cut into 3/4” rustic chunks
Chopped fresh parsley, for garnish
Pre-heat oven to 400 F.
Put the olive oil in a cold medium sized sauce pan and add the potatoes. Stir the potatoes until well coated. Transfer the potatoes to a shallow metal roasting pan and sprinkle with 1–2 pinches of salt and fresh black pepper. Place in the oven and roast for 40–50 minutes, while flipping every 5–10 minutes. Let the potatoes get crisp, golden brown and sizzling.
SAUCE
Sauté the onion in the same medium sized pan that the potatoes were tossed in the oil with, on 5–6/10 heat for 5–10 minutes. Add the garlic and sauté for about a minute. Then add the paprika, chilli powder, and red chilli flakes…
